Ingredients

skinless, boneless chicken breast halves , diced

1   can (14.5 oz.) 
DEL MONTE® Diced Tomatoes with Garlic and Onion

1   Tbsp. 
chili powder

1   can (15 oz.) 
low sodium black beans or kidney beans , drained

1   can (15.25 oz.) 
DEL MONTE® Whole Kernel Golden Sweet Corn , drained

¼   cup 
cilantro or sliced green onions (optional) , chopped

 
Garnishes:

 
Shredded Monterey Jack Cheese

 
Diced avocado

 
Chopped radishes

 
Sliced green onions

Directions

  1. Combine chicken,undrained tomatoes and chili powder in medium saucepan. Cook over medium heat about 5 minutes or until chicken is done and sauce is slightly thickened.
  2. Add remaining ingredients and simmer 5-7 minutes or until heated through.
  3. Garnish with cheese, avocado, radishes and onions as desired
