Acapulco Pork Salad

Ingredients
- 1 can (14-1/2 oz.)
DEL MONTE® Diced Tomatoes
- 3 Tbsp
salsa
- 1/4 cup
fresh lime juice or red wine vinegar
- 1 lb
boneless pork chops, thinly sliced
- 3 Tbsp
olive oil
- 1 clove
garlic, minced
- 6 cups
lettuce, torn, loosely packed

Directions
- Drain tomatoes reserving 1/3 cup liquid. Add salsa and lime juice to reserved liquid.
- Pour 1/3 cup over meat; marinate 1/2 hour. Drain meat.
- Heat 1 tablespoon oil in skillet over high heat. Brown pork. Stir in onion and garlic; cook until meat is done and onion is soft.
- Stir remaining 2 tablespoons oil into reserved salsa mixture.
- Toss warm meat mixture with lettuce, tomatoes, and reserved salsa dressing. Season to taste with salt and pepper, if desired. Garnish with avocado, cilantro and lime wedges, if desired.
