  • 1  can (14-1/2 oz.)  DEL MONTE® Diced Tomatoes
  • 3  Tbsp  salsa
  • 1/4  cup  fresh lime juice or red wine vinegar
  • 1  lb  boneless pork chops, thinly sliced
  • 3  Tbsp  olive oil
  • 1  clove  garlic, minced
  • 6  cups  lettuce, torn, loosely packed
Directions

Directions

  1. Drain tomatoes reserving 1/3 cup liquid. Add salsa and lime juice to reserved liquid.
  2. Pour 1/3 cup over meat; marinate 1/2 hour. Drain meat.
  3. Heat 1 tablespoon oil in skillet over high heat. Brown pork. Stir in onion and garlic; cook until meat is done and onion is soft.
  4. Stir remaining 2 tablespoons oil into reserved salsa mixture.
  5. Toss warm meat mixture with lettuce, tomatoes, and reserved salsa dressing. Season to taste with salt and pepper, if desired. Garnish with avocado, cilantro and lime wedges, if desired.

recipe says to use reserved liquid to marinate then use the reserve liquid as dressing isn't that contaminated with raw meat? as i see there is something wrong with this.
