  • 1  pound skinless, boneless chicken breasts, cut into ¾ -inch strips
  • 1  Tbsp. canola oil
  • 2  Tbsp. butter or margarine
  • 3  Tbsp. all-purpose flour
  • 1  can (14.5 oz.) COLLEGE INN® Chicken Broth (99% Fat Free)
  • ½  cup Low Fat or Fat Free Milk
  • ¼  cup prepared pesto sauce
  • 1  tsp. lemon juice
  • ¼  tsp. black pepper
  •  Hot cooked angel hair pasta
  •  Grated Parmesan cheese
Directions

Directions

  1. In a large skillet, cook chicken in oil until browned and cooked through, about 4 minutes. Remove chicken from skillet and keep warm.
  2. In same skillet, melt butter; stir in flour and cook until bubbly.
  3. Add broth slowly to flour mixture stirring constantly to avoid having clumps form. Add milk and cook stirring constantly until mixture thickens.
  4. Stir in pesto, lemon juice and pepper.
  5. Return chicken to skillet; heat.
  6. Serve over pasta and sprinkle with grated cheese

recipe says to use reserved liquid to marinate then use the reserve liquid as dressing isn't that contaminated with raw meat? as i see there is something wrong with this.

i want something simple but delicious meal for my family. im a working mom and dont have much time to cook. my kids love fried chicken and my husband loves soups... we dont eat pork because im a muslim. the problem is that we dont have market here who would sale even an olive oil.. just a simple oil for frying. i want something thats easy to cook and more affordable ingredients.. thanks and more power!
